I disagree. It is not that dissonant. The original chant is clearly recognizable, and the harmonies (more modal than tonal) are supporting it! Of course, it's an improvisation, thus a bit hectic and missing a bit construction. Though... Impressive once you know that in those years Jean Langlais was pretty much disabled by illness (not counting he was blind).

How does holding a chord for 20 minutes constitute the label of improvisation?

What a stark and unpleasant contrast to the Daniel Roth improvisation we heard on this same music last hour. 20 min of mind numbing inharmonic dissonance!
